150 grams of tapioca flour
1 egg white
1 teaspoon salt
1/2 teaspoon white pepper
2–3 tablespoons cold water (as needed)
For the broth:
1 liter of water
100 grams of shrimp shells and heads (for broth base)
3 cloves garlic, minced
2 shallots, minced
1 stalk lemongrass, bruised
1 tablespoon cooking oil
Salt and pepper to taste
A pinch of sugar
Other ingredients:
Glass noodles (soaked in warm water until soft)
Dried black fungus mushrooms (soaked and sliced)
Chopped celery and green onions
Fried shallots (for garnish)
Lime wedges and chili sauce (optional)
Instructions
1. Make the Fish Cakes:
Grind the fish meat in a food processor until smooth.
Transfer the fish paste to a bowl and mix in the egg white, salt, pepper, and tapioca flour.
Gradually add cold water while mixing until the dough is smooth and can be shaped.
Shape the dough into small balls using a spoon.
Boil water in a pot, then drop the fish balls in. Cook until they float. Remove and set aside.
2. Prepare the Broth:
Sauté the minced garlic and shallots in oil until fragrant.
Add shrimp shells and stir-fry for a few minutes.
Add water, lemongrass, salt, pepper, and a pinch of sugar.
Simmer for about 20–30 minutes, then strain the broth to remove the solids.
3. Assemble the Dish:
Place softened glass noodles, sliced mushrooms, and fish cakes into serving bowls.
Pour the hot broth over the ingredients.
Sprinkle with chopped celery, green onions, and fried shallots.
Serve with lime wedges and chili sauce on the side.
