How to Make Bulgogi: A Simple Korean BBQ Beef Recipe

Bulgogi is one of the most popular Korean dishes enjoyed around the world. The name “bulgogi” means “fire meat” in Korean, and it refers to thin slices of marinated beef that are grilled or stir-fried. This dish is known for its sweet, savory, and slightly smoky flavor. Here is a simple guide to making delicious bulgogi at home.

Ingredients:

500g (about 1 lb) thinly sliced beef (usually ribeye or sirloin)

1/4 cup soy sauce

2 tablespoons sugar (or honey)

1 tablespoon sesame oil

2 cloves garlic, minced

1/2 small onion, grated or finely chopped

1/2 pear (Asian pear preferred), grated (for tenderizing and sweetness)

1 tablespoon rice wine or mirin (optional)

1/4 teaspoon black pepper

1 tablespoon chopped green onion

1 teaspoon toasted sesame seeds


Optional Add-ins:

Sliced carrots, mushrooms, or onions


Green peppers or scallions


Instructions:

Prepare the Beef

Slice the beef as thinly as possible. If the beef is slightly frozen, it’s easier to cut into thin slices. Thin slices absorb the marinade better and cook faster.

Make the Marinade

In a bowl, mix together the soy sauce, sugar, sesame oil, garlic, onion, grated pear, rice wine (if using), and black pepper. Stir until the sugar is dissolved.

Marinate the Meat

Add the sliced beef to the marinade and mix well to ensure all pieces are coated. Cover and let it marinate in the refrigerator for at least 30 minutes, but for best flavor, let it marinate for 2–4 hours.

Cook the Bulgogi

Heat a non-stick pan or grill over medium-high heat. Cook the beef in small batches so it browns well. Add vegetables if desired and stir-fry together until fully cooked.
