Asem-Asem Grobogan – A Traditional Javanese Sour-Savory Dish Recipe

Asem-Asem Grobogan is a traditional Indonesian dish originating from the Grobogan area in Central Java. This dish is known for its refreshing sour and savory taste, usually made with beef or beef brisket, combined with tamarind, tomatoes, and a blend of aromatic spices. Ingredients:

500 grams of beef (brisket or other tender cuts), cut into cubes

2 tablespoons tamarind paste (or to taste)

2 tomatoes, sliced

5 shallots, thinly sliced

3 cloves of garlic, minced

5 bird’s eye chilies (optional), left whole or sliced

2 bay leaves

2 kaffir lime leaves

2 cm galangal, bruised

1 tablespoon sweet soy sauce

1 teaspoon salt

½ teaspoon sugar

1 liter of water

Cooking oil for sautéing

Instructions:

1. Prepare the beef:Boil the beef cubes in water until tender. Skim off any foam that forms on the surface. Once the meat is tender, set it aside and keep the broth.

2. Sauté the spices:In a separate pan, heat a bit of cooking oil. Sauté the shallots, garlic, galangal, and bay leaves until fragrant.

4. Combine the ingredients:Add the sautéed spices into the beef broth. Mix well.

5. Add tamarind and tomatoes:Stir in the tamarind paste, sliced tomatoes, kaffir lime leaves, and chilies. Let it simmer for about 10–15 minutes so the flavors blend.

6. Season the dish:Add salt, sugar, and sweet soy sauce. Adjust the seasoning to taste. If you like it more sour, you can add a bit more tamarind paste.

7. Final simmer:Add the cooked beef into the broth and let it simmer together for another 10 minutes.

8. Serve:Serve hot with steamed rice. Garnish with fresh herbs or fried shallots if desired.

Tips:

You can substitute beef with other meats like chicken or tempeh for a variation.

Tamarind water can be made by soaking tamarind pulp in warm water and straining it.

For a spicier version, crush the chilies instead of leaving them whole.
